Elizabeth Blessing, Co-Owner of Green BEAN Delivery, contributes recipes and healthy living tips to our Healthy Times Blog. You can find many of these recipes in the Recipe Box. We are lucky to have such an informed, passionate nutritionist on staff. Elizabeth is an accomplished whole foods nutritionist, speaker and curriculum writer. She has a B.S. in Applied Health-Dietetics from Indiana University and an M.S. in Nutrition from Bastyr University in Seattle. At Bastyr, Elizabeth was Garden Supervisor for a 1-acre organic herb and vegetable garden that provided food for the cafeteria and for the university’s whole foods cooking classes. Elizabeth also co-published a Washington State University web-based curriculum, Cultivating Health and Nutrition through Gardening Education (CHANGE) . The curriculum allows students to have the opportunity to grow, harvest and prepare foods while learning about nutrition and wellness.
